Sofrito

Welcome to another edition of the Healthy Teaching Kitchen, brought to you by the Miami VA Healthcare System’s Nutrition and Food Services Team. Sofrito (Spanish), also known as soffritto (Italian) or refogado (Portuguese), is a blend of aromatic ingredients that are finely chopped, and sautéed or braised in cooking oil. It can be used in a variety of dishes, and is most commonly used in the Spanish culture to flavor stews, beans, rice, and meats. We hope you enjoy!

Ingredients

• 1 large tomato
• 1 large red bell pepper
• 1 large yellow onion
• 5 garlic cloves
• 1 bunch cilantro
• ¼ cup olive oil

Instructions

1. Peel garlic, coarsely chop tomatoes, peppers, onions, and cilantro.
2. Put in food processor or blender and pulse/blend until finely chopped.
3. Portion into ice trays or sip lock bags and freeze overnight.
4. Use as needed.
