Chocolate Zucchini Muffins

These muffins taste like chocolate cake and are made with nutritious ingredients such as zucchini, yogurt, and whole wheat flour.

Ingredients
:
2 eggs
½ cup plain yogurt (regular or Greek)
½ cup canola oil
1
½ cups white whole wheat flour
½ cup of sugar
¼ cup of cocoa powder
1 teaspoon cinnamon
1 teaspoon baking soda
½ teaspoon salt

¼ teaspoon baking powder

¼ cup of chocolate chips
1½ cups shredded fresh zucchini

Directions:

1. Preheat oven to 350 degrees. Spray a muffin tin, either 24 mini muffins or 12 regular sized.
2. In a medium bowl, combine eggs, yogurt, oil and sugar, blend well.
3. In a separate bowl, combine the flour, cocoa powder, cinnamon, baking soda, salt, and baking powder. Mix.
4. Combine the wet and dry; the batter will be thick.

Bake for 15-22 minutes, depending on the size of your muffins.
