Healthy Strawberry Dessert

Happy National Nutrition Month!
VA Dietitian Meredith Rockey demonstrates how to make a quick and healthy strawberry treat.

Ingredients:
1 large tortilla
1/4 cup sliced strawberries
1 tbsp honey
1 tbsp peanut butter
1/4 cup mixed berries

Directions:
1. Heat a medium skillet with a light coating of non-stick spray.
2. Lay a large tortilla flat on the plate. Make one single cut from the middle to the edge of the tortilla.
3. Divide the tortilla in quadrants. In Quadrant 1, add a drizzle of honey. Quadrant 2, lay sliced strawberries. Quadrant 3, spread a layer of peanut butter. Quadrant 4, spoon in some mixed berries.
4. Fold the quadrants on top of each other clockwise, creating a triangular pocket.
5. Place pocket in heated pan and grill for 1-2 minutes, until golden brown.
6. Remove from heat, let cool slightly, and enjoy!
