Spinach and Swiss Frittata
Spinach and Swiss Frittata

Ingredients
:
6 large eggs
1/4 teaspoon pepper
1/4 teaspoon salt
1 1/4 cups shredded Swiss cheese
1 Tablespoon Olive Oil
1 cup chopped spinach, excess liquid removed
Directions:
1. Preheat broiler to high.
2. In a bowl, whisk eggs pepper, salt and 1 cup cheese.
3. In a 10 in ovenproof skillet, heat oil over medium heat. Add
spinach and cook until tender.
4. Reduce heat to low and pour in egg mixture. Cook, covered
4-6 minutes or until nearly set then remove top and
sprinkle with remaining cheese..
5. Broil for 2-3 minutes until eggs are completely set. Let
stand 5 minutes. Cut into 8 wedges.

Recipe Notes
: If using frozen, fresh, or canned spinach, squeeze all excess liquid.
Adding any diced vegetables, such as onion, bell pepper, mushrooms, or tomatoes increases fiber and nutrition
benefits. If adding extra vegetables, cook with spinach.
Can substitute egg whites or Egg Beaters for eggs.
