Crustless Quiche Muffins

Crustless Quiche Muffins:
Prep Time: 25 minutes | Cook Time: 20 minutes |Total Time: 50 minutes
Yield: 12 servings | Serving Size: 1 Muffin

Ingredients:
8 large Eggs
1 cup shredded Mozzarella Cheese
½ Red Bell Pepper
1 large Onion
10 oz Spinach
½ tablespoon Olive Oil
¼ teaspoon Black Pepper
¼ tsp Salt
Non-stick Cooking Spray

Directions:
1. Place oven rack in the middle and preheat to 350°F.
2. Coat Muffin Pan with non-stick cooking spray. Set aside.
3. In a large mixing bowl whisk Eggs, Salt, and Pepper. Set aside.
4. Dice Onion and half a Red Bell Pepper. Set aside.
5. Squeeze out moisture from frozen Spinach. Set aside.
6. Oil a large skillet with Olive Oil and heat on medium-high heat.
7. Add diced Onions and Red Bell Pepper to the heated skillet. Cook until they become soft. (3-5 minutes)
8. Add Spinach and cook until most of moisture is gone. (5-7 minutes)
9. Remove skillet from heat and let Spinach Mixture cool. (2-3 minutes)
10. Fill each Muffin Pan cup halfway with Spinach Mixture. (¼ cup Spinach-Mix)
11. Fill the remaining space with Egg-Mixture.
12. Sprinkle Mozzarella Cheese on top. (1.5 tbsp)
13. Carefully, transfer Muffin Pan to the oven’s middle rack and bake for 20 minutes.
14. Carefully, remove from oven and let them cool. (5 minutes)
